Not necessarily a bug persay but it took one hit with no chance to defend and all of Bris'  money in the world died in front of her before she had a chance to even turn around.

Maybe make them a bit tougher so when you are not riding them you at least have a chance to defend them before they die?

Yeah there's no reason they can't be CR5-7

Agreed. CR7 is fine.

I'll add this to the list of horse fixes I've got going.  Should have them soon...maybe today.
How about also an OnAttacked/OnDamaged hook to just make them run off?

I don't know about the run off part. Players will want to defend the horses (if the player is around of course) and chasing the horse as it runs off may aggrevate them.  No idea though.
If you think that is a good solution that is fine, just remember that the horse may run off to be in even more trouble.

Maybe better AC? Because they don't really fight back..they're domesticated animals, not warhorses.

That is fine. Do what you think will aid players in keeping the horses alive but in a realistic (as much as one can of course) way.  More AC, a little better attack (but not much) and more hp would be fine.

Thanks for the reports and input.  The next update (tomorrow) should include a fix for this as well as a few other issues/additions.
