Okay, so I go to the ranger's vale in minstrone since it has a temple of aeridin there ... but the holy symbols sold by the priest were for druids. Is there a function to having a specific holy symbol for your god? and if Aeridin is supposed to have temples everywhere (according to the new handbook) where in the heck is one that actually sells holy symbols for Aeridin? It would appear that no where in mistrone is there a location for this which kind of negates the comment of having temples all over Layonara.

There aren't really deity-specific holy symbols.
Just 5 kinds.
Evil one, good one, neutral one, nature one and then the ones you can enchant any amulet to be with a high level cleric/druid spell.
Just get one and RP it as a symbol of your deity.

Or find a Priest of Aeridin that will consecrate a symbol for you but that is generally expensive.
