Question please.
If half-Giants can weild greatswords 1 handed. Why can't they duel weild great swords as well?

Cronk with two great swords? Now that's something I would like to see! Ha!
Maybe because if you weilded two great swords it could be a bit strong or something...*He shrugs*

You are talking about game mechanics here. First, all of the original character races are of medium or smaller size. The half giant, as you know, is considered large in size.
creature size....max size 2-handed....max size primary hand.....max size secondary hand
..........................................................while dual weilding.........while dual weilding
small ...............medium......................small ..............................tiny
medium .............large........................medium ..........................small
large ...............large.........................large................................medium
Note that a shield can be substituted for the off-hand weapon in the above table... i.e. a spear (large weapon) and a shield can be used for example by a large creature.
So you will see that a half-giant, considered "large" in size, can only use a medium weapon in the off hand while dual weilding. So the best a half-giant might do is something like a greatsword in the primary hand and a longsword in the secondary/off-hand

Bearing in mind that my character cannot wield any sword, let alone two, I am fairly certain I have seen elves and humans (medium sized creatures) dual-wield long swords (i.e., have a long sword in both hands). I believe your table my not be wholly correct.
There is an advantage of having a weapon one size smaller than the creature-size in the off hand, but I don't think it's a requirement.

Confirmed - you can dual wield any weapon you can wield one-handed, but at a significant penalty. Having a "light" (one size class smaller than you) weapon in your off hand improves your attack bonus with each hand (or at least reduces the penalty), but there's nothing preventing a human or elf from dual-wielding longswords.

So then a half-giant should be able to dual wield two large weapons.

yes, half-giants can wield two greatswords, two greataxes, etc. the only thing is, even if they have both the two weapon fight feat, and the ambidexterity feat, they will get a -4 to their attack rolls, where as if they wield a smaller weapon in the offhand, the penalty is reduced to a -2. if they don't have the feats, the penalties get much worse. look up the TWO-Weapon fighting and Ambidexterity feats in the LORE index.

They can't dual-wield large as a large creature. Its just how the game is. Yes, medium size creatures can dual-wield medium sized weapons (i.e. dwarven waraxes, longswords, etc.) But the giants and all other large creatures (even the NPCs and monsters) are not capable of doing so.
Why? I'm not wholly sure, but I would imagine it relates to issues with the toolset. Perhaps something along the lines of animations, or other technical stuff I don't understand. Bear in mind that half-giants and other large creatures were not originally designed to be a playable race, so the game was not originally planning to have to worry about the issue of large creatures dual-wielding.
So in short, the largest weapon you can have in an off-hand is a medium weapon. Why? Because that's how the game works.
