If a character where to move from current class to another for the requisite 5 levels..and then return to the original..would this then count as 3 classes..thus disallowing a move to a prestige class in the future or would it still count as 2 leaving the way open for adoption of a third class if so desired.

As long as you can freely multiclass between your two choices, that won't cause any problems. You'll only have 2 classes, regardless of the order in which you take the levels.

Unless one of those classes is Paladin or Monk, correct? Once you step off the path of righteousness or enlightenment, you may never go back. :O

Unless... You have a Paladin of Lucinda, which with the mage ward are allowed to freely multiclass...
Erh...
Exceptions to the exceptions! ;)

I beleive that's why Dorg said "freely" multiclass.
