Is there a master list anywhere that has the specific statistics of poisons and traps by type and material?
My character has tried focusing on these two things. And there are a few things I just can't seem to nail down. Such as do all poisons have the same CR for the dex check to apply them? If not, what are they? What difference is there between a minor and average trap of a certain type? Stuff like that. I tried looking through some forums, but didn't find anything that laid out this information.

I'm not aware of any list that details that information. I do know the dex check varies for poisons, increasing as they become more potent.

Itelletas should know what the DCs for poisons are, up to Dire Spider. Gods know I supply him with enough of the stuff.
The DC to apply shows up in the server message box, in your DEX check vs. DC X. The DC and damage can be seen when you Examine your poisoned weapon.
So just stock up, and then test it. Then you can post the list for the benefit of all.
EDIT: As to traps... The difference between Minor and Average is in the damage dealt. And so on and so forth. With the poison gas traps, I'm not entirely sure... Probably, though, they use the poison's Fort DC and damage.
The Reflex DC is based on the Set Trap skill of the one to set the trap.

Poison gas is higher saves.

Want to test some DCs in the Arena? We can go wander around Central and invade some houses, get some traps, and form a comprehensive guide to traps. It could be fun. Are you going to be around tonight? I'm really sore (Wii boxing is FUN!) and will be home at about 8:30pm EST.

That sounds great, and a much quicker way to make some jink than taking it all from Cespar.

I could also just look in the toolset. Heh. 1 sec.
EDIT - Take a look in the toolset, select the trap you want (under the triggers option), then select the comment tab to see all the information. It should look like this..
Minor Tangle Detect DC: 10 Disarm DC: 22 Set DC: 15 Damage / Effect: Movement reduced by half for 3 rounds.

Does this help? http://www.nwnwiki.org/Trap
Not sure if the stats are valid...

nwnwiki is generally quite reliable.
8bit - I wouldn't count on the comments on the traps, many times bioware just copied the first blueprint they made and modified the stuff to change it to the next, and... forgot to update the comments. The save DC and search DC are visible on one of the other tabs though (forget the name of it atm.)
