I recently spotted certain statistics on higher-level armour that read:
Damage Reduction: Soak 5/+1
Damage Resistance: Slashing 5/-
It made me wonder, do these two stack with each other? I would think that the soak damage makes the slashing resistance obsolete, seeing how soak encompasses all kinds of damage, not just slashing.
Knowledge is the key.

They should, in theory, stack, (one being a resistance, the other being reduction) but you're not going to get 10/+1 DR from a slashing attack.
That said, the best will always apply -- the "5/- slashing" will still apply even if attacked with a +1 or better weapon, which would negate the "soak 5/+1". With this combo, you essentially have "5/+1 AND (bludgeoning OR piercing)".

Say a weapon, like a greatsword, is to sucessfully hit (Full damage 2d6+whatever). I believe ten points would not count, unless the weapon is a +1.

Yep. As has been stated, they stack. If you want more clear cut explanations of how damage reduction and damage resistance works and what stacks, etc. check out LORE. In this case, look under the "Glossary of Terms" heading on the "Start Here" page.

Thanks, that clears things up.
