There is a free web-based bug tracking system called Mantis Mantis Bug Tracker (http://www.mantisbt.org/) that I have found useful on past projects.
Depending on how much info you expose to the players vs. keep hidden to the project team it might give the players a better sense of the enormous amount of work actively ongoing.
