Many of the most represented giants in game are those that don't directly fit with the elemental division, but are more environmental... desert or forest giants, for instance. Do these groups identify with an individual element that is related to their environment (maybe fire for desert and earth for forest), or do they blend their elemental affinities?

That's because the giants in game are the stock D&D ones and what was written for Grannoch is with the MMO in mind.
Forest could match Eart, and desert could match Fire, but it's not a 1-1 correlation.
The giant models will not be changed in this incarnation of Layonara though.
