I really like the gloominess of the caves at night.. so I was wondering, how many people would like it if they were always set to night mode?

Caves are dark! They should stay that way!

They are all set to "night" actually, but their lighting is such that they're not fully "dark". The day/night settings don't necessarily make them light or dark. We could make an area that is dark during the day and light at night, but that would be confusing and silly. The Day/Night setting is more for whether or not the lighting changes based on the time of day. All caves I know about are already set to "always night", so their lighting is a constant.
There are many reasons why most caves are as they are, not the least of which being playability.
By all rights, the Deep should be nearly pitch black in most places, but that would actually change the challenge of those areas and we'd probably have to adjust encounters to compensate.
For what it's worth, any time I build a cave, I build for atmosphere. Look at the Silkwood Spider Cave, for example. As it gets deeper, even on that first level, it gets progressively darker.

Ah thanks for the explanation there dorg. Although I have to say that I don't see that kind of gloominess anymore in the silkwood cave (copper tin).

He (Dorg) means the Silkwood Spider cave where the Blood Spiders are. I just found the place the other day and I have spent a lot of time in the Silk Woods.

yes I understood what he was talking of :P I meant the cave that the pic was taken from, doesn't do what it used to do. Meaning, there was a much steeper contrast between the day and the night in that cave, where the night was better looking and still as easy to play in as the day version.
The "spider" cave of silkwood, as it is commonly called, is dark just like I like it :D

What you're looking at is an odd side-effect of the gradual day/night transitions that were enabled a few updates ago. There haven't been any lighting changes to any areas for a very long time, at least not on the scale that would affect so many areas. So twice a day, many of the interior areas lose their "ambient" light during the transition and eventually return to their configured lighting.
