Just lobbing this out there for input, but what if snakes were occasionally skinable? Then we could make boots with them, belts, cloaks and gloves... something that might be poison resistant or something like that. I know this is a pretty light intro, but was hoping those with a better sense of what might be possible could chime in.

*Bruce hums a tune while looking at goods*
Seeing something he likes he places 1200 in the chest for an iron battleaxe, 3880 for a ring of endurance and an amulet of strength.
*He seems to dance for joy on the way out*

KeKoa steps in and changes armor...
Picked up a set of Adamantium Full Plate in exchange for gently used Platinum Full plate.
Puts 3000 coin in chest with a scribbled note,
"Coin is fer the difference in armor, Talia said it would be ok."
Stamped KeKoa Holyaxe.

@orth, looks like you have other input on the "stacking" issue. Here's what I came up with, Corn, Berries(maybe not pears or apples, but for sure things like elderberries, grapes, cranberries, blueberries, juniper berries, etc), empty vials, empty flasks, milk, honey. I'm sure there is more but all I was dealing with at the time. I will also put this on the thread in the forums.

Is there a reason that things like milk, empty flasks, empty vials, honey and the like don't stack like juices, empty juice bottles and whatnot? I noticed in the EE upgrade that gum arabic is now stacked on the tree, which is cool, but was wondering if we could do it with the rest? Even stacks of 7-10 would be better than not stackable...

Definitely try to run it on your current system and see how it performs. Alternatively, look at Ubuntu which it appears NWN EE runs on natively. Then I would use Wine to run your on-prem Office software. No costs above the NWN EE costs.
I didn't have much luck with wine to play Diamond, but I found a slick program called "Porting Kit" that uses wine wrappers but it's all tweaked for the game. Hope it helps...
