Changing Deities

How would /could one go about having a character change religious affiliation?
I'm not talking about a cleric but, in my case, a warrior. My thought was to have a character who, at the start would have a particular affiliation, but, as time progresses, he changes and "discovers" a new better path ...maybe leading towards becoming a paladin or other holy warrior.(Newly converted fanatic). Would this  be best served only through  a Character Development Qust ? Any thouthts on the day-to-day roleplaying of this ?

It is not necessary that this be fulfilled through a Character Development quest unless your class is Cleric or Paladin or Druid I'd think.  Though you may find that's the way you wish to work it, you can achieve it through day to day RP, and flesh it out in a Character Development thread.

Once you feel your character has "decided" to finally follow this deity, you can simply ask a GM to set your Deity to the appropriate one.

If you do then choose to go to a different class (Paladin or Cleric), then this would have to be approved by submitting for the change in your Character Approval thread.  A CDQ for something like this would probably help that class change be approved.
