I made a char that follows Grannoch(a giant god) and one of the dogmas is that I never should kill any follower of Grannoch. Then I wonder, how should I do if I get attacked by a giant? Would I be allowed to defend myself or should I just run?

You can always defend yourself, that is not the concern.  Pretty much the main thing that is referring to is when you encounter non-hostile creatures.

Self-defense is a valid argument, i believe... Also, i don't think all giants follow Grannoch, though i may be mistaken.
