How do you make a half-giant, when its not even a choice from the races :P

It is a sub-race skin that is applied after you log on. In order to receive it, you must make use of the Sub-Race field when choosing race during character creation. I believe Half-Giant should be entered in said field, when having the standard race Half-Orc selected.

Also, remember that the subrace bonuses and penalties (+3 STR, +4 CON, -4 INT, -4 CHA) will be applied in-game after the fact, so adjust your starting abilities accordingly.  (You will need a minimum of 10 INT and 12 CHA, or vice-versa, in order to adhere to the min/max rules.)
